#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

Laurel 3rd at Ironman 70.3 Cartagena

Laurel returned to the podium with another 3rd place finish at Ironman 70.3 Cartagena. The race starts just outside the walled city, continues along the coast and then wraps up with a 13 mile run inside the old city. It’s a unique and challenge triathlon, especially with temperatures in the 90s F.
