#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

Congratulations to Laurel for finishing in 5th place at Ironman Zurich. She finished the demanding 140.6 mile route in 9hrs 56min. This was Laurel's 11th Ironman finish. She took some amazing photos in Switzerland and will share those in a gallery.
