#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

Bec 6th and Laurel 7th at Challenge Daytona Pro Race Under the Lights

We were 6th and 7th place in a world-class field at the Challenge Daytona triathlon. The race took place at 4:30PM under the lights at the famed Daytona International Speedway in Daytona Beach, Florida. We swam 1 mile in the lake in the infield of the stadium and biked 15 laps around the car race track. The run was 2 laps around the track for a 37 mile bike and 8 mile run.
