#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

Laurel 2nd at Ecuador 70.3

Laurel returned to Manta Ecuador, and once again finished 2nd place at the 70.3 half ironman race.  She had a strong swim, and moved into 2nd place on the bike.  Laurel ran a 1:29 half marathon but could not make up any ground on Lauren Brandon, who won her first 70.3. Congrats, Lauren! More photos soon.  Up next for Laurel is the Qujing 70.3 in China and Bec will be racing the Ireland 70.3 on August 19.
