#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

Laurel had a strong race with a well rounded swim, bike and run to place 4th at the Philly Tri.  Bec showed that she is starting to regain her fitness as a mom of a 5 month old Lizzy with a world class swim.  Unfortunately, she was unable to finish the bike because of a flat tire.  Two other pros also got flat tires on the same big bump.  Many thanks to the Escape Triathlon Series for putting on such a fun event.
