#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

We are getting our final workouts in ahead of the Philly Tri this weekend. Looking forward to racing this great and seeing friends and family along the course. Laurel raced yesterday's  New Paltz Challenge 5k as a tune up to get ready for the hot and humid conditions that we usually face in Philly.
