One Recipe, 10 Dinners: Bison Kale Mix

We make this recipe at least once a week and have it in the fridge for kid meals, post-workout snack attacks, or as a component to a Fast Dinner. We like to keep the seasoning flavorful, but fairly generic so that it can be adapted to a variety of dishes. Spaghetti and meat sauce. Burrito bowls. Asian lettuce wraps. If you've seen my Instagram, you know one of my favorite post-swim meals is a heaping spoonful of this mix jammed into a warmed corn tortilla. Laurel likes it in a bowl with brown rice and a tahini sauce.

This mix is also a good vessel for sneaking in bonus servings of vegetables, if you are in the market for that (aren't we all??). You'd be surprised how much kale you can pile in, it's easily an entire bunch, if you chop it small enough. We always add a grated carrot or two. Other vegetables work too - small pieces of broccoli, edamame, corn, diced bell peppers. 

There isn't really much of a recipe behind this. It's basically just cook a pound or two of meat with some Green Seasoning and a bunch of vegetables. But here's our best interpretation. After you make it a few times, you'll come up with your own way to season this and won't need this recipe!


Athlete Food Bison Kale Mix

1 tablespoon Athlete Food Green Seasoning

1 pound ground bison (or grass-fed beef)

1 bunch kale, sliced

1 carrot, grated

optional: 1/2 head of broccoli cut into mini florets, diced bell peppers, corn

1-2 teaspoons soy sauce

dried cilantro or dried oregano

black pepper

Cook the Green Seasoning in a small amount of olive oil for about a minute over medium high heat. Add the ground meat. Break it up and mix it with the green seasoning. Add cilantro or oregano, soy sauce, and black pepper. Once the meat starts to brown, add the carrots, kale and whatever other vegetables you are using. Cook until meat is no longer pink. Drain any excess fat. Taste and add additional seasoning if it needs it.
