Pantry Dinner: Burrito Bake
Here's a super simple dinner idea that you can make out of pantry items. It’s a great way to feed a hungry family, or even one super hungry triathlete! Plus, it will look like you spent all day in the kitchen and not all day riding your bike. We used our Bison Kale Mix , but you can easily make it vegetarian by just using the kale and not the meat. Exact proportions of the ingredients are up to you and your likes and dislikes, or what you have on hand. Assemble this and pop this in the freezer for another day. Just don’t freeze the toppings!
Athlete Food Burrito Bake
Filling:
Cooked Brown Rice
1 Can Black Beans, rinsed
Lime Zest and Juice
Frozen Corn
Salsa or fresh tomatoes
Toppings:
sliced purple cabbage
diced green bell peppers
hot sauce (optional)
Layer the above ingredients. Cook in oven preheated to 350 until warmed through.
Top with cabbage and green peppers and serve with hot sauce.
