Crostini for the Gluten-Free People: Sweet Potato Toast
Crostini used to be an automatic ix-nay for me.
Until I discovered sweet potato toast. Ok, so it's not exactly a toasted baguette, but a thick slice of a roasted white-fleshed** sweet potato does the trick (and, as a bonus, looks like bread, too).
You can even toast the slices in a toaster, as we did in the video below. But we prefer to roast them with a little olive oil in a 400 degree oven for 20 minutes.
Here's to not having to scrape the toppings off and eat them with a spoon!

**Orange sweet potatoes work too, but we prefer the more subtle taste of the white ones. We get them from Amazon Fresh.
