Flourless Five Ingredient Peanut Butter Cookies
Checking in here from our quarantine in upstate New York. Our grocery stores here have been out of a lot of things: oatmeal, paper products, baby wipes…and FLOUR! We still wanted to bake so decided to search for a flourless recipe on thefeedfeed.com and found this simple 5 ingredient recipe from Kate Gavlick from @vegukate. This recipe also made a great home school activity for Des. We hope everyone is staying safe and suggest this recipe if you are out of flour. We skipped the dipping part to save our chocolate chips for nervous snacking! Scroll down for recipe.
Recipe:
INGREDIENTS
1 cup creamy peanut butter
1 cup light brown sugar
1 large egg
1 teaspoon baking soda
1 teaspoon vanilla extract
1/2 cup dark chocolate chips
pinch flaky sea salt
METHOD
STEP 1
Preheat oven to 350°F and line a baking sheet with parchment paper.
STEP 2
Using a stand mixer or hand mixer, beat peanut butter and coconut sugar together on medium speed until combined and creamy. Add in the egg, vanilla, and baking soda and beat until smooth.
STEP 3
Use a cookie scoop or a heaped tablespoon to portion dough and use your hands to roll into balls. Place cookie balls on the lined baking tray and use a fork to press the dough down and create a crisscross.
STEP 4
Bake cookies for 9-10 minutes or until the cookies are lightly browned at the edges. Let cookies cool for 5 minutes on tray before transferring to a wire rack.
STEP 5
Add chocolate chips to a microwave safe bowl and microwave for 30 seconds, stir, and microwave another 30 seconds, or until chocolate is melted and smooth. Carefully dip half of each cookie into melted chocolate and sprinkle with sea salt. Let cool on wire rack.
