RECIPE: Sheet Pan Fish Tacos
I have been cooking in the “sheet pan” style for years…I was actually a bit embarrassed about it since it seemed like such a basic way of cooking - but, now it’s all the rage. It has always made perfect sense to me as a hungry athlete: quick and easy and healthy - with minimal clean-up. If that’s your jam, check out this meal!
This method is great because all the flavors meld together and then get stuffed inside a tortilla for a balanced meal. The key here is the Athlete Food Ancho Chili Mix which is one of our make-ahead short cuts. You can also use your favorite taco seasoning (packet or spice jar or your own blend), but we recommend giving this spice mix a try. You can make a big batch and have it for the future to cut down on prep. We think these spices do the trick and no extra sauces necessary. Oh, except for hot sauce I know I can’t live without! Ingredients:
2 handfuls of cherry or grape tomatoes, cut in half
2 ears of corn, kernels taken off the cob
2 green onions, sliced
1/2 a green bell pepper, diced
1/2 teaspoon cumin
pinch of Smoked Sea Salt Flakes
About 1 pound of of Steelhead Trout or Salmon, cut into individual portions
Athlete Food ancho spice mix (or your favorite taco seasoning)
Fresh Cilantro
1 Lime
Tortillas
Directions:
On a sheet pan, combine tomatoes, corn, onions and peppers with 1 teaspoon of olive oil and smoked sea salt. Stir to combine. Sprinkle with cumin and smoked sea salt.
Nestle the salmon pieces, skin side down, among the tomato mixture. Season with Athlete Food Ancho Chili Spice Mix.
Bake at 400F for 10 minutes, then switch to broil for 2 minutes.
Remove from oven and top with cilantro and lime juice. (This really adds a fresh taste and sets this meal over the top!).
Break apart fish and serve in warm tortillas.
It’s hard to say how much this will serve…adjust your quantities based on how hungry your athletes or mini athletes are! After a bike ride I ate half the tray myself! You can also make two trays at once.
