#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

We’re so excited to announce that we’ve partnered with Allen Sports for the upcoming 2018 triathlon season. Both Laurel (super aunt) and I will be training with Allen’s bike trailers and baby joggers. 

We’re using the XLZ2 stroller/trailer, which we call “The Pod.”  It fits two kids (yes, I’ve joined the double stroller club!) and can easily be converted to a bike trailer. Hello, family bike rides that double as a quad burning workout!

This summer we’ll be taking it outside for strength runs on the carriage roads in the Mohonk Preserve and long rides on the Wallkill Valley Rail Trail. 

But for now we’ve been using The Pod to keep Amy and Des warm and cozy as we transport them around the NYC streets in the winter elements.
