#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

Checking in quickly after racing the 5150 Bohol in the Philipines. Triathlon is HUGE here! I'd heard that, but experiencing a race here exceeded all of my expectations. Sunrise events put a fantastic event. The race was held at Bellvue Bohol resort, with the finish line right on the beach. As in on the sand. I lead the swim in the clearest blue water, swimming amongst tropical fish and sea urchins. That was a first! The bike was flat as fast and the run was SCORCHING. Yes, I meant to use all-caps there. It was hot. But that's how it is done here so I did my best to run with a smile and get to the finish line in 3rd place.
