Twin Star Orchard's Apple Salad
We've been apple picking almost every weekend this fall. It's a good way to stretch out the legs after a hard workout and the little people love pulling the apples off the trees. After every harvest, I say to myself "we have too many apples" but then by the end of the week, they're all gone and we're back out there.
In the New Paltz area, our favorite picking spot is Twin Star. This orchard is also home to Brooklyn Cider House's tasting room and we highly recommend starting off the event with a few glasses of hard cider. There's also have a pavilion serving wood-fired pizzas and grass-fed beef burgers, both with mouth-watering toppings. Both delicious, but what stood out at our last meal there was this amazing apple salad that was served with the burger. Imagine the perfect summer tomato salad brought to another level with the addition of crisp, fresh-picked apples.
I immediately recreated the salad when we brought our peck of apples home.
The ingredients are:
-crisp apples
-cucumber
-tomatoes
-red onion
-oil, vinegar, spices (almost like an Italian dressing flavor).
There aren't any set amounts of each ingredient, it's more of a taste as you go recipe. I also added red peppers which seemed to add something extra to this already unique flavor combination.
