Over the weekend my mom visited for 24-hours. I've always looked forward to visits from mom, but now as a mom myself, I get how helpful they can be. Even though I've been able to manage everything okay on my own, just having my mom around made me feel like I was on a spa vacation. Well, I shouldn't say I've been managing on my own, most of the credit should be given to our baby nurse. Having a nurse for the baby is a big luxury, but it allows me to do the essentials: sleep and focus on getting back into shape. I still find it hard to get out to do anything fun or relaxing.
But when my mom visited last Saturday, we did just that. We got mani's and massages, went shopping, and ate dinner late at the bar of a nice restaurant. And best of all, on Sunday morning, I escaped to Chelsea Piers for a workout without a deadline by which I had to rush back home to relieve the baby nurse. My mom was content to sit around and play with Amy all day.
In my few hours at the gym, I tackled my first "real" swim of the year. My previous four post-baby swims were a mix of aqua jogging and swimming drills. But on Sunday I swam 3k including some intervals that made me push myself.
This little swim gave me a taste of what's to come. And, as swimming often does, it left me hungry! Instead of going out and trying to find a cafe to accommodate Amy's big stroller, we stayed in and finished off our short, spa-like visit with a light spring? lunch: beet and walnut salads and homemade grapefruit soda. Amy smiled, cooed and played the entire time and saved the crying for the second after we said good-bye to her grandmother.

Beet Walnut Salad
Toss the following ingredients into a large salad bowl:
butter lettuce
pre-cooked roasted beets (I used Beet Love brand)
chopped toasted walnuts
shaved Pecorino Toscano cheese
lemon vinaigrette (lemon, olive oil, shallots, little bit of maple syrup, salt, pepper)
