This afternoon I was invited to lunch with my favorite neighborhood English bulldogs. Since I had 4 workouts on the schedule and no time to cook, I decided to stop into Whole Foods to grab lunch after my first work out of the day at Soul Cycle. Inspired by Henry & Edward's heritage and love for red meat, I decided to compose a salad version of a traditional British roast dinner.
I found sliced London broil behind the prepared food counter and roasted vegetables at the salad bar and topped the salad with a little roquefort from the cheese department.
Henry & Edward's Salad
Mixture of chopped romaine & baby spinach
Roasted vegetables (sweet potatoes, mushrooms, carrots, cauliflower)
top with roquefort & a few dried cranberries
**There's no need for salad dressing as the prepared meat & roasted veggies come seasoned
Served with iced tea and don't forget to save a bite of meat for the dogs!
