All in Recipe

We have a special treat for you today. Our friend, Elana, of the blog John and Elana Talk About Food is here to share a healthy Super Bowl recipe with us. Elana's managed to transform an Athlete Food favorite ingredient into the perfect half-time snack. Even those of you who aren't so down (to earth) with this superfood of root vegetables will be reaching for the bowl of chips.

Triathletes, you may recognize Elana from the race course or from her recent contributions to Triathlete Magazine. If this recipe leaves you hungry for more, go eat up some time on Elana's blog

Now that Laurel is back into full-time training mode and I'm in full-time mom mode, the idea of taking the time to cook a healthy meal seems as unlikely as running a four minute mile. That's where our Athlete Food editor Melissa steps in. She's assured us that we can still prepare quick, easy, and nutritious meals on our limited time budgets. Melissa suggests preparing simple foods with just a few ingredients and throwing in a some shortcuts that we otherwise wouldn't normally take (think simmer sauces, frozen items, pre-cut veggies).

We brainstormed ideas over email and came up with a bunch of fast, easy recipes. Over the next couple of weeks we'll be sharing them with you. We're starting off the recipe that got Melissa through the first few weeks of life with a newborn. Laurel and I think this makes a perfect salty snack for athletes and are hoping it wins over some chips & salsa fans when we serve it during the Super Bowl.

Lucky LaurelWe're kicking off the year with a recipe from one of our Athlete Food followers and Certified Nutrition Coach Lisa Consiglio Ryan. Lisa, also a Detox expert and fellow triathlete, shared this power-packed Lucky Soup with us and we thought we'd pass it along to you.

With the temperature dropping well below freezing here in New York, we've been downing hot soups and beverages daily. Laurel and I made Lisa's soup before the holidays and froze it. I can't tell you how lucky I feel be able to pull it out of the freezer this afternoon.

Continue reading below the photo for the recipe and to find out what Lisa has to say about it.

Enjoy and thank you Lisa!

This year I won't be toasting the New Year with champagne. Instead, we're gong to sip this bubbly, festive and alcohol-free drink as we continue to lay low and wait for the baby's arrival (about 2-3 weeks?!). I came up with this fruit flavored seltzer after we received a big box of Harry & David's pears as a holiday gift.

Like a lot of triathletes, I rely on my blender to fix quick meals year round. In the spring and summer when I'm training all the time, I make smoothies almost every day to pack in calories and nutrients with minimal effort. This fall, I used the blender as a soup-making machine to stock my freezer so that come January, John and I can enjoy a home cooked meal when we’re sleepwalking through new parenthood.

It's our lucky day! Chef Jacob Griffin from Madava Farms generously shared with us his recipe from last weekend's cookie decorating event

We loved these cookies because they were flavorful, yet not overly sweet, even once decorated with sugary royal icing.

This is how Jacob, a graduate of the Culinary Institute of America, describes his recipe:

"This recipe is inspired by Madava Farms' Crown Maple Syrup.  The cookies from this recipe highlight our Dark Amber Syrup with a touch of ginger spice and molasses.  It was tricky finding a good balance between the Crown Maple and the molasses because they are both strong flavors."
