Aside from being gluten free to help control allergies, I don't adhere to a specific diet. Some days I'll eat sweet potato fries from the local diner or have a huge handful of M&M's after dinner and dessert.
All in Dinner
We have a "house salad" for dinner at least 3 times a week. In the Athlete Food kitchen, this means combining the best, and least weird, ingredients from what's on hand in the refrigerator and pantry. The house dressing is almost always dressed with our Maple Curry Salad Dressing, but for last night's meal, I strayed and used tomatillo sauce.
After over doing it last week, this week has been all about simplifying things. It's been all about relaxing, spending time with family (my mom, dad and Laurel are here) and enjoying the last few days of summer.
One of the best things about summer in New Paltz is that the produce is so fresh that little has to be done to turn fresh picked veggies into a meal. Take this simple tomato and basil salad, for example. All you have to do is slice a few heirloom tomatoes and toss a handful of sungold gold tomatoes and fresh basil leaves on a plate. Sprinkle with salt and pepper and you’ve got the perfect BBQ side dish.
Today is the wettest and coldest start to the Memorial Day weekend in at least 113 years (according to the Mohonk Preserve's weather data). As a result, our planned bike ride in the Catskills is not happening.

We're kicking off the year with a recipe from one of our Athlete Food followers and Certified Nutrition Coach Lisa Consiglio Ryan. Lisa, also a Detox expert and fellow triathlete, shared this power-packed Lucky Soup with us and we thought we'd pass it along to you.
With the temperature dropping well below freezing here in New York, we've been downing hot soups and beverages daily. Laurel and I made Lisa's soup before the holidays and froze it. I can't tell you how lucky I feel be able to pull it out of the freezer this afternoon.
