Wish We Were in Kona Poke

We’ve gotten a lot of requests for this salmon poke #recipe, so here it is!! Poke has been one of our favorite things to eat, after discovering it at a grocery store in Maui during a training camp for the Olympics. Then again, we found it in Kona while there for the Ironman World Championships. A few years later, it turned up in NYC! Now, we have come up with a recipe to have it right in your own home.

You can try substituting hearts of palm or avocado or tofu for the salmon to make it #vegan. As always, feel free to add more veggies.

Ingredients:

1.5 pounds sushi grade salmon, cut into bite sized pieces

1 medium green pepper, diced 1 jalapeño pepper, seeded and sliced

1” fresh ginger, peeled and grated

1/2 of a large cucumber, seeded and diced

2 tablespoons low-sodium tamari

1 tablespoon sesame oil

1 tablespoon Mirin

1 tablespoon furikake seasoning (or 1 tablespoon sesame seeds)

optional toppings: fresh chives & avocado

How to:

Mix all of the above ingredients in large bowl. Eat right away, or if you can wait, let it chill for 15 minutes for maximum flavor.
