It is amazing to think of the training and racing we are to accomplish being fueled by only energy gels. But after a day of training, we need REAL food to fuel us through the rest of our day. We crave healthy savory meals like these Athlete Food Lettuce Wraps. It’s a bonus that they are super easy to make.
Athlete Food Lettuce Wraps
For the filling:
1 teaspoon coconut oil
1 small shallot, diced
1 half small onion, diced
1 pound ground meat
1 carrot, grated
3 tablespoons lime juice
1 tablespoon fish sauce
1 teaspoon honey
For serving:
lettuce leaves
cooked quinoa
chopped cashews
cilantro and/or micro greens
green onions, sliced
sambal olek
Heat coconut oil over medium heat. Add shallots and cook until soft, about 5 minutes.
Add meat and cook it until it is brown, breaking it up with a spoon or spatula. Add grated carrot.
When meat is cooked, drain any excess fat. Return meat to frying pan and add lime juice, fish sauce, and honey. Cook and stir for a few additional minutes to make sure ingredients are well dispersed.
Serve with lettuce leaves, quinoa, chopped cashews, cilantro or micro greens, green onions, and sambal olek.
