Laurie's Loafaliscious Gluten Free Almond Butter Bread
What do you do for that person you would like to give a gift to, but not just any gift will do?
We think homemade baked good always do the trick. Especially if that person is gluten-free and always appreciates a good baked treat.
With that in mind, we set out today to make our physical therapist, Carolyn, the perfect holiday gift. Carolyn puts everyone back together and back on the race course, football field, morning show, late show, Oscars...she basically works magic which is why not just any gift would do!
Our friend Annick came over with her friend Laurieβs recipe for this amazing Almond Bread. Itβs gluten-free and only uses honey for sweetening.
Itβs a super simple recipe and the secret is using an immersion blender to mix the ingredients.
Laurieβs Loafalicious Gluten-Free Almond Bread
Mix:
1/2 c almond butter (we used a Once Again toasted, unsweetened and crunchy version)
2 eggs
1 t vanilla
2 T honey
Blend with immersion blender
Then add:
1 T cinnamon
1/4 t salt and baking soda each
Blend again
Add in a handful of chocolate chips and mix. Add some more chocolate chips to the top before baking.
Pour into well greased loaf pan (we greased with ghee)
Bake 350 25 min
** You can also use blueberries for more of a blueberry muffin type of loaf.**
