#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

Jumping into the Next Triathlon Adventure: Challenge Iskandar Puteri + Ironman Taiwan

The next two races in this very busy 2017 season will take Laurel to Malaysia and Taiwan (via Hong Kong & Singapore). First up is Challenge Iskandar Puteri a half iron distance race. The race takes place in and around southern Malaysia's Puteri Harbour Marina, a 20 minute drive from Singapore. The run course winds through Hello Kitty Land, Lego Land, and a Thomas the Train theme park. 

After a few days of recovery (maybe checking out one of those parks?), Laurel heads to Penghu, Taiwan to take on the full Ironman distance on October 1. The bike course traverses various islands in the Taiwan Strait. If there's a moment to sightsee during the race, Laurel might be able to catch the beautiful beaches and Taiwanese temples that the region is known for.
