We're in the experimenting stage as far as non-gazpacho cold soups are concerned. We love the idea of them and have had some amazing cold restaurant soups (white gazpacho with cucumber sorbet at North End Grill and peach, cucumber, and serrano soup from Pinewood Social in Nashville), but so far our attempts to recreate these at home leave us going back to our standbys, SJ's mom's gazpacho and Athlete Food Beet the Competition chilled soup. We wish our grandmother from Brooklyn was here to tell us how she made the summer fruit soups our dad talks about.
Help us out and send along any cold soup recipes you like and we'll try them. In the meantime, these two are on our to-make list:
Chilled Litchi and Almond Soup from The Wall Street Journal
Chilled Cucumber & Avocado Soup from Nerds With Knives (thanks for the tip, Maren!)
