The three of us are on a tomato cream cream cheese toast kick. We've eaten it for breakfast, lunch, post-workout snack, and as a no-cook, no-fuss dinner. It's too good not to try.
Here's how to make it:
On a slice of whole-grain toast, layer the following:
whipped cream cheese
sliced tomatoes**
sea salt & pepper
drizzle of olive oil
**we used these cute mini heirloom tomatoes from a farm upstate, but any juicy summer tomato would work.
