We came up with this recipe with our allergen-conscious friends and family in mind and the 14 under the age of 10 who circled around our Thanksgiving table last year looking for something to eat.
Butternut squash gives that familiar bright orange color of traditional mac 'n cheese since we use goat cheese instead of cheddar (or velveeta!). We even hide some greens in it with small slivers of swiss chard.
