#meatlessmonday Grains & Greens bowl. Kale, roasted sweet potatoes & red onions, rice, lentils, Greek yogurt vinaigrette with tarragon, and our very own, homegrown hot pepper. Cold dinner for a hot night.
How to dessert. Today Amy wanted to bake so we made a strawberry upside down cake and piled on all the fresh berries, whipped cream, and mint. We used a cupcake recipe Amy found @delish, used half of the batter to make cupcakes and the rest for this.

I was really hoping that by doing this contest, we would either influence a non-triathlete to enter their first race or encourage a seasoned triathlete to make the trip to Philly to race with us. 

Turns out I got my wish! The winner is Nichole W., a good friend of ours who was a standout runner at SUNY New Paltz. I've been trying to get Nichole into the idea of doing a triathlon since she granduated last year...so now's your chance, Nichole! No pressure, of course. 

Since I knew a bunch of the names in the entry comments, I made sure to document my tabulations carefully, in case the results appeared fixed (which turned out to be the case). Remember, I am a CPA and once did this sort of thing for a living, so everyone can rest assured that the contest was fair!
