After Laurel's third consecutive win at the Westchester Tri, we drove over to nearby Greenwich, CT to celebrate the day with a bunch of triathlete friends. Lucky for everyone in attendance, Elena I (recently seen in Triathlete Magazine) was there cooking her specialty healthy and completely homemade pizzas. We got a chance to watch the master in action as she stetched the pizza dough grill-side, grilled the crusts to perfection, and then topped them with homemade sauces and various cheeses.
The pizzas:
-fresh fig, arugula, ricotta, prociutto (recipe)
-chorizo, corn, mini tomato and cilantro salsa, manchego
-roasted heirloom tomatoes, fresh mozarella, basil
The pizza was followed up by an Old Bay seasoned seafood boil of sea scallops, shrimp, clams, and corn on the cob. Athlete Food at its best!
