All in Treats

It’s Laurel here, making a cameo on the Athlete Food blog, while Bec attempts to relax in her final days before baby. As you may remember from our Pecan Pie Smackdown, I’m not much for baking. I like the idea of eating fresh baked goods, but the measuring and cleaning required takes me out of my comfort zone. A few weeks ago, however, I received a lovely care package from Elizabeth Stein founder of the gluten-free and all natural baking company, purely elizabeth. The box included a chocolate chip cookie mix easy and healthy enough that I thought I’d risk another kitchen experiment.

It's our lucky day! Chef Jacob Griffin from Madava Farms generously shared with us his recipe from last weekend's cookie decorating event

We loved these cookies because they were flavorful, yet not overly sweet, even once decorated with sugary royal icing.

This is how Jacob, a graduate of the Culinary Institute of America, describes his recipe:

"This recipe is inspired by Madava Farms' Crown Maple Syrup.  The cookies from this recipe highlight our Dark Amber Syrup with a touch of ginger spice and molasses.  It was tricky finding a good balance between the Crown Maple and the molasses because they are both strong flavors."
